Corn Gluten
Corn gluten does not exist. The is no gluten in corn. Corn gluten is a misuse of the word begun by the corn industry for no apparent reason.
Proper use of the term gluten is in relation to proteins (gliadin) found in wheat, oats, barley and rye. There are proteins found in corn and now known as corn gluten, but they are more properly called corn "zeins". Strange word...perhaps that's why the corn industry renamed it.
These "corn glutens" bear no resemblance to the "gliadin" proteins, nor do they carry with them some of the health consequences attributed to the gluten found in wheat, oats, barley or rye.
