Gluten Free Bread Recipes



Summary:
Gluten free bread recipes are becoming increasingly necessary for more and more people. A gluten free bread recipe will allow people who suffer from Celiac Disease, a gluten intolerance or gluten allergy to enjoy the taste of a good piece of bread. Bread baking gluten free is usually accomplished by simple substitution with an alternative grain.

Gluten Free Bread Recipes

Gluten free bread recipes are easily found by doing a simple internet search for "gluten free bread recipes". A gluten free bread recipe is defined by the elimination of any grains that contain gluten, a protein found in wheat, oats, barley, spelt, triticale and rye.

Bread baking gluten free will make use of "alternative" grains such as millet, buckwheat, amaranth, bean or lentil, rice, potato, tapioca, quinoa, sorghum, teff, soy, corn and arrowroot.

The problem making gluten free bread is that many of the gluten free flours lack the protein (gluten) that produces the "stretch" in the dough. Therefore, we have to substitute to create the stretch by using things such as xanthan gum, more eggs and extra leavening. These things help the bread to feel and taste more like the real thing.

An example of an easy gluten free bread recipe is found below. Use any of the gluten free grains and you also have choices in the type of sugar used.

Easy Gluten Free Recipe for Bread


2½ cups of any of the gluten free grains mentioned above
½ teaspoon sea salt
½ teaspoon baking soda
3 eggs
1 tablespoon agave nectar or equivalent sweetener
½ teaspoon apple cider vinegar

  • In a large bowl, combine flour, salt and baking soda
  • In a medium bowl, whisk the eggs, then add agave or other sugar and vinegar
  • Stir wet ingredients into dry
  • Scoop batter into a small (approx. 6 x 3 inch) well greased loaf pan
  • Bake at 300° for 45-55 minutes on bottom rack of oven; until a knife comes out clean
  • Cool and serve
Makes 12 slices.
