Gluten is contained in the grains wheat, oats, barley, triticale, spelt and rye. The simplest approach is to take a very common recipe and substitute non gluten containing grains for those that contain gluten.
The non-gluten containing grains to be used in gluten free recipes are arrowroot, corn, potato, rice, soy, tapioca, sorghum, quinoa, buckwheat, millet, amaranth and tef.
Unfortunately, there are health conditions caused by or aggravated by gluten or linked
to symptoms. They are: Irritable Bowel Syndrome, any form of Colitis, Crohn's
Disease, Celiac Disease, Multiple Sclerosis, Dermatitis Herpetiformis,
Eczema, Psoriasis, Rashes, Hives, Asthma, Rheumatoid Arthritis, Grave's
Disease and Hashimoto's Disease.
